Healthy breakfast ideas and Why Cheese Boards are the best

Hello! now here’s the rest of my trip to San Francisco with real California Milk… We left off with me going for a short run down past the Ferry building towards Fisherman’s Wharf. I ran a few miles while enjoying the stunning morning and views of the golden gate Bridge. Then, I headed back to the hotel to get ready and head to the real California Milk event.

We started by meeting Megan Silva [@CaDairyFit ] a 4th generation dairy farmer who still lives and works on the farm with her charming family. and incredibly significant to me in addition to living on a farm and caring for her family – she runs!

California is home to a lot more than 1,300 Dairy Farms, 99% of which are family owned like Silva’s.

Next up was Dr. Julia Nordgren who is a physician, chef and culinary educator at Stanford [@drjuliacooks]. She did a cooking demonstration on quick and make-ahead breakfast options with yogurt.

Healthy breakfast Tips:

1. plan and Prep.

Make breakfast ahead of time if you have busy mornings. Or prep as much of the meal as possible so it’s ‘grab and go’.

Tip: wash and chop your fruits and veggies when you get home from the grocery store so they’re easy to snack on and incorporate in meals.

A yogurt bowl is a good make ahead option for breakfast that’s easy to carry and doesn’t require any extra heating or preparation. I a small mason jar when I’m meal prepping yogurt bowls or overnight oats for the week.

2. options options options.

If your family members have different taste preferences try to accommodate them by giving them options on one dish that can be tailored to each person.

Tip: If you’re making yogurt bowls – let each person choose their toppings. healthy options include – different fruits, nuts, seeds and cereals.

3. Layer flavors and textures.

You can really take a meal to the next level by focusing on delicious flavors and textures.

Tip: add toppings with different flavors and textures to yogurt like crunchy nuts, soft fruit, chewy dried fruit, sweet honey or jam and spices like cinnamon or pumpkin pie spice.

We all had the chance to make our own yogurt bowls in a test kitchen. There were tons of options for toppings – fruit, nuts, seeds, sweeteners! It was a yogurt bowl buffet!! and there were even a lot more options for dishes, utensils and other accessories for the food photos.

Here’s my station complete with a Run eat Repeat name card. and some behind the scenes action of food photography lights…

I made a banana split with real California Milk yogurt, chopped apple, nuts and cherries.

Oh, and I’m pretty ecstatic about this apron – it has pockets and that makes my entire life better. Pockets are the best!

We also made cheese platters and had the most epic spread of real California Cheeses.

Cheese boards are a terrific idea for a get together because:

It’s a healthy option – 1 oz. cheese supplies about 20% of your daily recommended calcium intake.

A cheese board can be both delicious and make a stunning centerpiece – there are so lots of options! use a variety of fresh fruits and veggies to add color.

There’s something for everyone. You can include a lot of options so people with different diet and taste preferences can take pleasure in it together.

It’s a good appetizer to prep ahead of time – which makes hosting easier.

A fun cheese board can get people talking about their favorites and favorite cheese/fruit combinations. (Obviously I like to talk about food so I love when I can ask people what’s their favorite part of our meal.)

I like to have a crunchy cracker with a soft cheese or a strong aged cheese with something sweet.

The healthy breakfast ideas can be applied to making a cheese board too:

Offer a lot of options // Make it ahead of time // Layer flavors and textures

My cheese platter had a hard cheese, soft cheese, a tangy cheese to pair with honey plus fruit and crackers for pairing.

Boot Camp and Cookies

Last night Ben insisted on making chocolate chip cookies. Luckily, I convinced him to make half a batch, but we still have had* a lot of cookies for two people! (Yes, had. Oops.)

They came out good, but he didn’t put enough chocolate chip in and buttered the pan very generously (even though the directions said not to). I ate two last night and another big one in the middle of the night. Yeah, I couldn’t sleep and laid in bed for 2 1/2 hours before getting up for milk and cookies. call me Santa

I was really trying to get a good night of sleep because I’m going to be doing a 5:30am boot camp Monday through Thursday now! remember last week when I went to a boot camp training? Well, a local camp needs a new trainer so I will be attending the camp for a few weeks to learn the style before taking over the camp!!

This was on the way home – I need coffee and a nap.

This was the start of a new session of boot camp, so the work out was very introductory. We learned each other’s names and some common exercises. When I got home I had a banana and a bite of Ben’s egg sandwich before going for a run.

My Garmin is still dead from this weekend (I left it in my car) so I tried something new. A rep from Motorola sent me a MOTOACTV on Friday and decided to give it a whirl. It is a fitness tracker and music player and more that I haven’t figured out yet. I haven’t loaded music yet and just used it to track my distance and pace. full review coming soon!

Half a mile from my house I got hungry. I decided to cut the run to 3 miles total and go home to eat.

New workout plan: since I am training for another race I cannot continue to cut runs short. Going forward I’m going to take my running gear to the boot camp location and run around that neighborhood so I don’t have so much time between waking and eating a full meal. I am only running 3-4 days a week right now so that should only happen 2 days after camp.

Since the camp has members with many different abilities the instructor is leading and helping, but does not do the workouts. once I start teaching the camp myself I will not be doing the workouts and will definitely need to get in my runs with this plan!

Question: I am attending a cookie exchange party on Wednesday and need an easy and delicious cookie recipe. What should I make?

Directions: heat spinach in microwave and squeeze out all the excess water in a towel. mix yogurt, spinach, mayo, feta, red pepper flakes, salt and pepper together. serve as a dip with chunks of bread. रमाईलो!

I also topped Ben’s chicken with the dip. He thought it was a little too strong to eat like this and ended up putting it on a slice of bread.

My dinner was lots of samples of spinach & feta dip with bread and eggs with half a sweet potato. I was not hungry, but didn’t want to skip dinner (and set myself up for a kitchen plunder at 10pm) so I tried to keep it on the light side (for me).

I am still planning on eating the remainder of my burnt chickpeas tomorrow though… #chickpeafail I hope this doesn’t get me kicked out of the Chickpea Lover’s Club. Rose, am I still in? My 4th of July was semi-low essential so I really wanted to do something fun this weekend. because I didn’t have anything planned I chose to hit up Groupon and see if there was anything available within driving distance.

It’s a holiday weekend so I wasn’t expecting to find anything for Saturday, but I did! There was a deal for The Skylark hotel in palm Springs. This particular Groupon automatically reserved the night so all I had to do was show up.

Next thing ya know I’m on the open road…

The big ol’ fans are a sign you’re practically there.

My timing was perfection because we got to the hotel just as a pool party was about to start. There was a DJ and the hotel has a bar in the back.

After unwinding for a bit I grabbed some Slurpees from 7-11 and headed to my friend’s place to hand out.

It was a good night

It is very hot in palm Springs (under-statement of the year) so I’m pleased that today was a rest day from running. We did start the day with my favorite Sunday morning tradition – a walk to find iced coffee.

I passed a lot of cafes on the walk, but was on a mission to get good iced coffee and heard Espresso Cielo sells cold brewed. The place is very cute too!

It was a terrific morning outing, but I’m bummed I couldn’t take a nap on the sidewalk…

I think palm Springs is sooooo pretty. I can’t get over the mountains and palm trees. I think it’s partially because where I live there is always a marine layer that hides the mountains – it’s so clear here.

And when we got back The Skylark had Continental breakfast ready to go.

Then, it was time to relax….
